Today we’d like to introduce you to Shayna Desai
Shayna, we appreciate you taking the time to share your story with us today. Where does your story begin?
My passion for baking goes back for as long as I can remember. I would bake for family events, friends, any excuse honestly. I also found it very therapeutic during challenging times. During the covid times when everyone was trying out new hobbies, I ramped up baking and also expanded my knowledge on different ingredients. I started to look for things that were easier on the stomach to digest. Also from having eczema and being gluten sensitive, I wanted to create desserts that catered to a underrepresented crowd. I love dessert, both making and eating it, I knew that there had to be a way for desserts to taste good and be healthy. My husband was my inspiration for my first experiment using clean ingredients, he LOVES Chocolate Chip Cookies, and was on a quest to find the best one. I was determined that his best cookie would come from me! Boom, before I knew it, I created the recipe for our cookie on the menu Classic Chocolate Chip.
From there with the help of my Husband, the cookie ideas and menu just grew. It has been an amazing journey that I am so grateful to have the opportunity to share with the community.
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
It has been a road with a lot of learning. My husband and I are new to Nashville, or Tennessee in general, so we are still learning our ways around. This is also something we wanted to try out and see how it goes, we had no experience with what it takes to run a small business. It has been a lot of learning, from set up, to break down, to all of the prep work. Each step has been a new adventure truly. We have some good days, and some not so good days, but all is taken with a grain of salt, always learning.
Appreciate you sharing that. What else should we know about what you do?
I am a baker, I absolutely love that. When times get tough and I remind myself, well what else would I be doing with my time. It has been a dream come true doing what I have always been most passionate about. My husband on the other hand is more business oriented, providing a more consumer perspective. Truly he keeps me well rounded as I would have the hardest time with areas like costing, or even coming up with new ideas of what people would enjoy! He is the last magic touch in the entire business, perfecting it.
I specialize in making cookies mostly but it does not limit me to try new items out. I am also working on my bread knowledge, currently doing sourdough focaccia muffins that have been a hit!I am more known for how clean my products are in ingredients and the fullness of flavor. I always tell them, we satiate the tastebuds without the guilt!
We’re always looking for the lessons that can be learned in any situation, including tragic ones like the Covid-19 crisis. Are there any lessons you’ve learned that you can share?
My husband and I have learned that it truly matters what you put into your body for your nourishment and well-being. We are always working on ways to improve and to do things ourselves, using more cleaner and nourishing ingredients. Another very important lesson is, just because something is healthy doesn’t mean its not tasty.
