Meet James Nesbitt of Aunt Lib’s Pound Cakes

Today we’d like to introduce you to James Nesbitt

James, we appreciate you taking the time to share your story with us today. Where does your story begin?
The story of Aunt Lib’s Pound Cakes starts with the namesake, my Great Aunt Elizabeth “Lib”. As a child, and to this day, my favorite cake was a pound cake. So for me, the highlight of family dinners was Aunt Lib walking in with her signature pound cake. What made her cake so special was the unique density and level of moisture.

I always enjoyed cooking and experimenting in the kitchen, but my baking journey started after graduating from college; first up, Aunt Lib’s pound cake. You never know what you’ll get when you ask someone for a recipe. Some are very willing to share and some hold tight to the secrets. Thankfully for me, my Aunt Lib was all too happy to hand write the recipe for me.

As you might guess, that first cake did not turn out perfectly as I’d hoped, but it did provide an enjoyable challenge. Over the years I would pull out that recipe for holidays or just because, but it wasn’t until the beginning of 2024 that I took it seriously as a business endeavor. That is when I sat out a goal to build a menu of pound cakes with different flavors but Aunt Lib’s original recipe remains the north star.

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
Absolutely not! It has not always been a smooth road. When you’re just getting started there’s a ton of adrenaline fueled by optimism. Once that runs out you have to truly get strategic especially if, like me, you have other things competing for your attention like family and a day job. That’s not to mention the emotional roller coaster that can come from the process of working out recipes. There’s nothing like spending a few hours on a new cake recipe just to try it and realize it did not work out… dejecting.

We’ve been impressed with Aunt Lib’s Pound Cakes, but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
Aunt Lib’s Pound Cakes is a family business selling baked goods, specializing in pound cakes. Each member of the family is involved, even my six year old daughter cracks eggs.

What sets us apart is that aim to not just provide delicious cakes, but we want the flavors to invoke memories that briefly transport you back to some of your happiest times.

I am extremely proud that the brand stays true to the legacy of my Aunt Lib. I’m thankful that she’s still around to see a company bearing her name and proudly boasting about something that she created.

Aunt Lib’s Pound Cake is the perfect addition to any holiday, family dinner, special occasion, or just a delicious indulgence. We provide whole cakes by order and can be found selling slices at various markets around the area.

We all have a different way of looking at and defining success. How do you define success?
I see success in different ways. Having an idea and seeing it through to fruition. Showing my daughter that if you have a goal and work hard to accomplish said goal, you can do incredible things, that’s a success. Beyond that, I want people to hear Aunt Lib’s and immediately associate the name with high quality baked goods and service to match.
