Rising Stars: Meet April Erb

Today we’d like to introduce you to April Erb.

Hi April, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
My husband and I along with our three kiddos moved from Los Angeles to College Grove, TN (Williamson County) about 5 years ago. After learning that there wasn’t a great local coffee shop in College Grove, we started thinking about opening our own.

We found a great location which was the old College Grove grocery store space and sort of did a Chip and Joanna Gaines fixer-upper renovation on it. My husband, Bryan Todd, is in the music business and he is very creative and I have the business background which makes us a great team. I run the day to day operations and also grew up with a family-owned business and enjoyed all of the things I learned from it.

We want our children to learn that responsibility and work ethic, Sip-n-Scoop is currently the ultimate country market, coffee, ice-cream, baked goods, New-York style pizza and a country-style food bar. We also just found out we are approved for full liquor service which is exciting!

I’m sure you wouldn’t say it’s been obstacle free, but so far would you say the journey have been a fairly smooth road?
Never a smooth road! haha… prior to open we had to have lots of meetings with septic and the county for approvals. The septic presented a lot of challenges, but the county was great to work with. They know College Grove needed this. In the current climate we have had to come through the pandemic which presented a new set of challenges. There are all challenges in staffing, etc.

Appreciate you sharing that. What else should we know about what you do?
I have an economics and finance degree. My whole life has been in corporate America but with Sip-n-Scoop, I was wanting to change it up, get back to my roots of growing up with a family business and focus on the community and giving back!

What’s next?
We are excited about the full liquor service and adding a bar to Sip-n-Scoop. That will be a game changer and add so much to our LIVE music events we have once a month.
