Today we’d like to introduce you to Edgar Victoria.
Hi Edgar, please kick things off for us with an introduction to yourself and your story.
Two weeks after the pandemic, and jobless just like most people that work in the industry. I decided to start Alebrije, a Mexican concept that would bring thousands of years of tradition to the table by using a process called, nixtamalization. The goal with this for Alebrije is to support farmers that grow and harvest this corn in Mexico and also support our local farmers in Nashville by making masa dishes that change with every season.
A Mexican concept thats fun, full of tradition, with a story to tell behind every dish, and wants you to feel like you walk into a friend’s house you come to see us, but most importantly a concept that hopes to represent who we are, and where we come from by making food based on memories.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way? Looking back would you say it’s been easy or smooth in retrospect?
These are difficult times, so you might get busy sometimes… other’s may appear not that busy… just gotta get up and keep going at it! Never give up!

Handmade tortillas and masa by using heirloom corn from Mexico authentic Mexican Cuisine, all made from scratch.
