Community Highlights: Meet Tamikia White of Seafood Sacs

Today we’d like to introduce you to Tamikia White.

Hi Tamikia, thanks for joining us today. We’d love for you to start by introducing yourself.
Seafood Sacs originally started as a food truck in the Middle TN area, primarily serving Wilson County. We would take our food truck out on the weekends, and either doing private functions or set up at the Lebanon Outlet Mall, which brings us to where we are currently located. In 2000 we were approached about putting a permanent location inside the Food Court of the Lebanon Outlet, and we opened the doors to the location on March 12, 2000. We are currently into our second year in the Food Court location and would love to remain there and expand.

Can you talk to us about the challenges and lessons you’ve learned along the way? Would you say it’s been easy or smooth in retrospect?
Consistency is very key. The road to any business is always a challenge. We have been able to remain consistent in our products and services, making it a little easier to handle the current struggle of a declining shopping mall. But we are forward thinkers, so we have added daiquiris to our menu and just will continue promoting our business and remaining consistent.

Thanks for sharing that. So, maybe next you can tell us a bit more about your business?
Seafood Sacs was established by Ron and Tamikia White and is family owned and operated. Our goal is to give the people of the Middle Tennessee area the best Cajun food to be had anywhere. Our menu consists of various dishes inspired from south Louisiana and Texas, from Low Country Boils to Jambalaya and boiled crawfish.

Many Seafood Sacs dishes are made from scratch. Some take just a few minutes longer to prepare than others. Rest assured that we do not pre-cook many dishes, which would take away from the natural flavors and compromise quality. At Seafood Sacs, we strive to have the most courteous, timely service and quality menu possible.

Our Bling Sauce is the staple house sauce we created to have something different with our seafood. All of our seafood is also shaken our garlic butter. We bottle our sauce and seasoning for those who like to create their meals. Don’t let the name fool you. We also pride ourselves on offering delicious BBQ ribs, awesome fried catfish, and juicy hot wings. Try them topped with Lebanon Dust (lemon pepper).

We also offer catering services.

We’re always looking for the lessons that can be learned in any situation, including tragic ones like the Covid-19 crisis. Are there any lessons you’ve learned that you can share?
Covid-19 has taught us to be flexible, and that change is not so bad. As we struggled with how to maintain during the closure, we would do online orders and do pickup only days. We would have a line of cars moving in and out to get their seafood fixed. We would have our sons mask up and deliver the order to the cars so that no one would have to get out. I would say forward thinking and being flexible have been very important lessons learned during the Covid-19 crisis.
