Daily Inspiration: Meet Martin Boedker

Today we’d like to introduce you to Martin Boedker. 

Hi Martin, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstories with our readers?
I started my own bar back in 2011. In 2017 we opened, with Copenhagen Street Food, Storms Pakhus, which is placed I Odense Denmark. Storms is a street food market with 18 food stalls and 6 bars. We have around 700.000 guests visiting each year and that makes us one of the biggest attractions on Funen where Odense is the biggest city. 

Today we have 9 venues (bars, restaurants and a Street Food market), all in Odense, which are in times 2021 greatest places to visit. 

Would you say it’s been a smooth road, and if not, what are some of the biggest challenges you’ve faced along the way?
We have been in business for 10 years now, so of course, there are struggles along the way. The biggest struggles has definitely been the corona pandemic. For Storms Pakhus, which are our biggest venue, we have been closed twice to government restrictions. To balance our economy while keeping people in job, and trying to understand restrictions and what the consequences would be has been difficult. 

Appreciate you sharing that. What else should we know about what you do?
I’m partner and CEO at Storms Pakhus, and we try to get young local chefs to open their own food stall. We give them the guests and the venue to open a small restaurant where they only should care about the food. We take care of the rest. 

I get proud when we get official recognition from local government or when I read articles that praises our business model. 

In Odense we don’t have another street food market, so we have no competitors, and we are that big and have an amazing venue that no one really can compete with us. 

What’s next?
I think the year 2022 we just want to have a whole year without corona disruption. And when we hit 2023 it is time to do some changes regarding our outside area and our back entrance. We are always trying to improve and optimize the business.
