Good morning Annika, we’re so happy to have you here with us and we’d love to explore your story and how you think about life and legacy and so much more. So let’s start with a question we often ask: What is something outside of work that is bringing you joy lately?
Lately, I’ve been enjoying audiobooks! They’ve become a great way for me to unwind and shift my focus after the workday, whether I’m doing chores, driving, or working on other tasks. It’s been a wonderful way to relax while also making steady progress toward my reading goals for the year!

Can you briefly introduce yourself and share what makes you or your brand unique?
Hi, I’m Annika Baylis, founder of Prickly Pear Coffee Co., a specialty coffee brand with two (almost three – coming this fall!) vibrant locations. What makes Prickly Pear unique is our commitment to creating community through thoughtfully crafted coffee experiences—whether it’s the welcoming atmosphere, carefully sourced beans, or the stories we share with every cup.

Beyond serving exceptional coffee, I’m passionate about supporting other entrepreneurs and fostering connection. Right now, I’m focused on expanding Prickly Pear’s reach, launching new ideas, and exploring creative ways to blend business growth with meaningful impact.

At its heart, Prickly Pear Coffee Co. is about more than coffee—it’s about building spaces where people feel at home, inspired, and energized.

Amazing, so let’s take a moment to go back in time. Who saw you clearly before you could see yourself?
Without a doubt, my parents saw me clearly long before I fully saw myself! One of my favorite memories that illustrates this is from when I was in elementary school, around eight or nine years old, and completely obsessed with playing school. I asked my mom if we could get desks for all of my “students.” Instead of dismissing the idea, she engaged with me by asking, “How many students do you have?” When I enthusiastically replied, “30!” she gently brought me back to reality—but this interaction perfectly exemplifies how my parents nurtured my creativity, passion, and ambition from a young age. Their unwavering support helped shape the person I am today.

Was there ever a time you almost gave up?
Absolutely—there have been many moments when I’ve felt close to giving up. As an entrepreneur, it’s truly a daily practice to reconnect with my “why” and stay grounded. What helps me persevere is spending intentional time in the Bible, cultivating parts of my routine that bring me joy, and appreciating the small, meaningful moments that keep me centered. These practices remind me of the purpose behind the work and fuel my resilience through the inevitable challenges.

I think our readers would appreciate hearing more about your values and what you think matters in life and career, etc. So our next question is along those lines. What’s a belief you used to hold tightly but now think was naive or wrong?
I used to firmly believe the common narrative that alternative milks are inherently better than real dairy! After doing my own research, I’ve realized that perspective was a bit naive. There’s a reason alternative milks have such a long shelf life—and it’s not always for the best! This shift in understanding has helped me appreciate the value of real dairy in a whole new way — high quality dairy only! (We love you, Hatcher Family Dairy!)

Okay, so before we go, let’s tackle one more area. What are you doing today that won’t pay off for 7–10 years?
My current job! Haha! One of the most significant investments I’m making today is building and growing my coffee business. While the rewards may not fully materialize for another 7 to 10 years, I am committed to laying a strong foundation for sustainable success and lasting impact on my family for years to come!
