Today we’d like to introduce you to Vita Palmeri
Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
We arrived in America through my husband’s work, along with my children Emanuele (Manny) and Federico (Freddy) in June 2015. We chose to raise our children in Fairfield, CT to give them the opportunity to expand their cultural vision.
At the beginning, it was quite a challenge for me and the boys. I felt isolated and lacked connections. My family encouraged me to start my own business, focusing on our traditions and love for food. People began to recognize me because their children would spend time with Manny and Freddy, who attend Fairfield Public School, after school and sample my food. In 2019, I established Vita Pasta Lab and rented a commercial space at Wakeman Town Farm, where I teach pasta-making classes and engage with customers to create different types of pasta. At the conclusion of each class, participants have the opportunity to enjoy the food while sitting around the table and sharing their experiences from the class. From 2019 until know Vita Pasta Lab has grown in a way that has brought me more exposure, allowing me to create menus for private kitchens, train chefs and staff in restaurants, and showcase my products at local retail stores such as Double L Market, Saugatuck Provision, and the Westport Farmers Market.
We all face challenges, but looking back would you describe it as a relatively smooth road?
No, as mentioned before, the road was not smooth at all. The language barrier was the first struggle; understanding the financial aspects of the country and the laws was incredibly difficult. Finding the path to rent a commercial kitchen, obtaining the necessary licenses to start selling at the market, and so on, was quite challenging.

Vita Pasta Lab offers an immersive experience that transports you directly to Italy. Through our cooking classes, you will acquire the skills to make fresh pasta. In your own kitchen, you can have me and my team serve as your personal chefs. I will develop a menu tailored to your preferences, bringing the flavors of Italian farm-to-table cuisine right to your home.
What quality or characteristic do you feel is most important to your success?
I am an authentic Italian, and what I sell is the real deal. I offer my skills and knowledge of the ingredients, along with truly Italian recipes.
