Daily Inspiration: Meet Brandi Knight and Nicole Francesconi

Today we’d like to introduce you to Brandi Knight and Nicole Francesconi.

Hi Brandi and Nicole, so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
We really love all things food… but the go-to comfort foods we always come back to making are charcuterie boards.

We have been creating boards for the past two years and we didn’t think anything of it until we realized our attention to detail to customize each board kept getting more and more meticulous.

Our passion started growing for trying different cheeses, fruits, and meats! Recently, we were like let’s just go for it and start our own business!

In the past, we have made charcuterie boards for events such as birthdays and holidays and it has always been such a great hit. People would always tell us that we should start selling them. Fast forward, here we are wanting to share our passions with you all.

We take pride in joy in every detail and will continue to do so as our business grows!!

Can you talk to us a bit about the challenges and lessons you’ve learned along the way? Looking back would you say it’s been easy or smooth in retrospect?
So far there haven’t been many issues along the way.

With each order we create, we learn something new that we can incorporate into future orders. We try to do many weekend events/charcuterie boards for now because we both also work full time at an aesthetics office!

Alright, so let’s switch gears a bit and talk business. What should we know about your work?
We currently both work at a medical aesthetic office. Nicole is a medical aesthetician and Brandi is a patient care coordinator for the company.

We originally were starting our charcuterie business on the side, but it has taken off a lot faster than we anticipated! We customize every order to our customer’s needs and love incorporating new ideas and techniques within each order.

We love having fun and we feel so lucky that we are able to do something we both love so much, while also having fun doing it.  We are so excited to see where this business takes us and all the opportunities that await!

The crisis has affected us all in different ways. How has it affected you and any important lessons or epiphanies you can share with us?
We both learned that life is so short, and if you want to do something just take the leap and go for it!!
