Hidden Gems: Meet Henry Fletcher of Phish Food

Today we’d like to introduce you to Henry Fletcher.

Hi Henry, thanks for joining us today. We’d love for you to start by introducing yourself.
Phish Food started as a catering company during the COVID-19 pandemic. I always had a passion for cooking, so I decided to use my talents to make some money and have fun. I would get two to three gigs a year. In 2023, I experienced a life-changing event that cost me my job. I wasn’t able to get another job, so I decided to focus on my talent to help me pay my bills. I started selling my food to friends and friends of friends. They loved the food. With a lot of help from my friends and family, I decided to open a brick-and-mortar store. I met a lady named Latasha Mays who owned a location called Low Key Lounge. After sitting at the table, we were able to form a great partnership and combine our businesses. Phish Food in conjunction with Low Key Lounge. We opened up in February 2026. After 4 months in business, I decided to explore a different location. I met with Latanya Buford (owner of The Velvet Room), and she welcomed me with open arms. She offered me better rates and a lot of knowledge to help me grow. I opened up at The Velvet Room in a small room in the back on May 5, 2026.

We all face challenges, but looking back would you describe it as a relatively smooth road?
It has not been a smooth road running Phish Food. The one major challenge I faced was money. If you recall, the great ice storm in Feb 2026 had a devastating impact on my finances. I put all my money into another location and could not open due to the storm. That led to money issues with moving forward with opening my business.

Thanks for sharing that. So, maybe next you can tell us a bit more about your business?
Phish Food is a culinary and catering business based right here in the Nashville area. After years of building my culinary skills, I took the leap to leave my previous job and focus on Phish Food full-time as an independent business. We are a locally grown, community-focused food service specializing in authentic Southern cuisine, smoked meats, and seafood. Whether through our physical location at 511 Gallatin Pike South in Madison, our local pop-up events at places like Shelby Park, or via delivery apps like DoorDash, Uber Eats, and Grubhub, we bring high-quality, soulful food directly to the people of Nashville.

We are known for our mastery of the smoker and our rich, comforting Southern sides. Our signature items include our smoked and stuffed turkey legs, fall-off-the-bone baby back ribs, and perfectly grilled wings. On the seafood and savory side, our catfish nuggets, fried pork chops, and Cajun chicken and shrimp pasta are massive crowd-pleasers. We pair all of this with classic, scratch-made sides like baked mac and cheese, collard greens, and yams, washed down with sweet tea or fruit punch.

What sets Phish Food apart is our resilience, our connection to the culture, and our deep roots in the Nashville community. We’ve navigated the typical hurdles of the restaurant industry—including relocating and rebuilding after storm damage at our previous Dickerson Pike location—without ever missing a beat or dropping our standards. We also keep our branding fun and culturally relevant, often incorporating pop culture and hip-hop themes into our events and promotions. We aren’t just selling plates; we are creating a whole vibe that our customers resonate with.

I am most proud of our commitment to giving back to the city that supports us. Building a successful business is a great feeling, but organizing events like our December community outreach drive on Lafayette Street—where we distributed hot food plates and clothing to those in need—is what really defines the heart of the Phish Food brand. I’m proud that we’ve built a brand strong enough to partner with local spots like LowKey Lounge, host massive college football watch parties, and continuously expand our footprint across Nashville.

I want people to know that Phish Food is all about heart, flavor, and consistency. Whether you are booking us to cater an event, stopping by our spot at 511 Gallatin Pike South in Madison, or ordering a plate through Square POS or your favorite delivery app, or even through my site (getphishfood.com), you are going to get an unforgettable meal.

What are your plans for the future?
Phish Food is planning to open up a food truck. Look for it to come around the year 2027. Not only will you have a place to sit down, but you will also have a place to sit down with friends and family, and I will come to you.
