Hi Eric, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
I started with almost nothing but an obsession with bold flavor and the perfect piece of hot chicken. The early days were rough—small space, tiny team, lots of long nights and recipe testing. What pushed us forward was being relentless about quality, not trends.

The community embraced the food, and that local momentum eventually turned into regional and national attention from places like Food & Wine and Food Network.

Today, we’re a recognized name in hot chicken culture, but my focus hasn’t changed: great seasoning, great frying, and showing love to the city that supported us first.

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
Absolutely not, haha. From truck breakdowns, predatory lending, and of course covid, things have been pretty rough along the way. But we’ve persevered and are now looking to expand.

We’re known for authentic Nashville Hot Chicken that’s aggressively seasoned, extra crispy, and seriously juicy. We specialize in spice-forward flavor built into every bite, not just sprinkled on top.
