Hi Erin, so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?

With over 10 years of experience as a pastry chef, I’ve always dreamed of owning my own shop. After serving as the Cake Department Manager at Frothy Monkey Bakery for the past four years, I had the privilege of having my cakes featured in local magazines, further fueling my passion for the craft.

We all face challenges, but looking back would you describe it as a relatively smooth road?
The journey here hasn’t been the easiest—and it’s one many in the food industry can relate to. Pursuing a career in the culinary world is no small feat. Culinary school is costly, and choosing to specialize in cakes? Let’s just say it’s rarely the most lucrative path.

I’ve spent the better part of my career working in small, local cake shops. The pay wasn’t glamorous, but what I gained along the way was priceless: hands-on experience, resilience, and the kind of skills you can’t learn from a textbook. Those years shaped who I am as a chef, and I wouldn’t trade them for anything.

With Love, Cake Co. was born out of the incredible love and support I’ve received from my friends, family, and community throughout my journey in the food world. After years in the industry, I’m thrilled to now be sharing that love—and a whole lot of buttercream—with the Nashville community.

Every cake we make is crafted with the skills and knowledge I’ve gained over the years. Our cakes and buttercreams are light, fluffy, and full of flavor—decadent without being heavy. Whether you’re after timeless classics or something a little more adventurous, we’ve got you covered. One of our favorites? The From the Garden collection, featuring all-natural floral and herbal flavors like rose water and lemon basil.

Looking for a custom cake design? We’re here to bring your dream to life! From a Bluey birthday cake to a Corvette-themed celebration, I’ve done it all—and I’m always ready for the next creative challenge.

Weddings are our specialty, and we have something for every couple. If you’re easygoing and unsure where to begin, we’ve just launched our curated wedding packages, offering three tiered options with four cake flavors and three design styles to choose from—simple, elegant, and stress-free.

In terms of your work and the industry, what are some of the changes you are expecting to see over the next five to ten years?
Over the years, I’ve had the privilege of working at and watching some truly amazing bakeries in Nashville—but I’ve also seen many of them close their doors. It’s heartbreaking. And it’s led me to ask a tough question: Are small cake and dessert shops dying out?

But here’s what I believe: it’s not the end—it’s a turning point.

When I started With Love, Cake Co., I made a decision. I wasn’t just opening another cake shop—I was stepping into an opportunity to breathe new life into an industry I’ve loved for so long. This moment, while challenging, is also full of potential. It’s a chance for new chefs, new ideas, and fresh perspectives to redefine what a bakery can be.

Nashville’s wedding scene is booming, and the city is brimming with wildly talented, creative people doing things their own way. I’m excited to be part of that energy—to contribute something beautiful, delicious, and full of heart to a city that’s always inspired me.
