Today we’d like to introduce you to Marco Biscarini

Hi Marco, we’d love for you to start by introducing yourself.
Vibrant Meals was founded by my wife, Romana, and me near the end of 2016. At the time, Romana was preparing meals for top UFC fighters and celebrities in Orange County, while I was immersed in a tech startup I co-founded in Chattanooga, TN. We were dating long-distance, and I saw an opportunity—not just to bring a fresh, healthy meal delivery concept to Tennessee, but also to convince Romana to make the move. Little did I know, I was about to embark on an incredible eight-year journey.

In the beginning, Romana was cooking out of her 500-square-foot studio apartment, preparing meals for a handful of CrossFit athletes. Word spread quickly, and orders doubled week after week. Before we knew it, her apartment was packed with extra refrigerators and fold-out tables just to keep up. By God’s grace, a commercial incubator kitchen had just opened, allowing us to scale—and with it, we hired our first employees through our church’s rehab program.

Since then, we’ve built three manufacturing kitchens, opened multiple retail locations, donated over 100,000 meals, and even acquired a competitor, Eat Well Nashville. But Vibrant wasn’t the only thing growing, since starting we now have two beautiful daughters, and twins on the way (yes, that’s four under five!). We’ve made the Inc. list of fastest-growing companies two years in a row and scaled our team to almost 50 employees.

However, the journey has not been without hardship. In 2020, amidst the chaos of COVID, we tragically lost three former employees—one of whom was our very first hire. This happened at the same time our first daughter was born, making it an incredibly difficult and trying season, one we never thought we would emerge from. Yet, through faith, resilience, and the unwavering support of our team and community, we persevered.

What started as a simple, homegrown operation has turned into something far bigger than we ever imagined. Our success has been a combination of faith, timing, and relentless hard work, and we’re just getting started.

We all face challenges, but looking back would you describe it as a relatively smooth road?
The journey of building Vibrant Meals has been anything but smooth. We’ve faced catastrophic equipment failures, critical supply shortages due to logistical breakdowns, and frustrating permitting complications with agencies like the TDA and the Department of Health. Our first commercial kitchen would often flood, it also had no heat or AC. We endured sabotage from a disgruntled former employee and navigated nearly two years of staffing and operational chaos caused by COVID-19 shutdowns—right around the time my wife decided to stay home with our first child, Gioia. The rapid rise in food and labor costs made it incredibly difficult to keep our meals both high-quality and affordable. On two separate occasions, we nearly ran out of cash—a daunting reality for a self-funded startup with no outside investment, aside from a check from my in-laws, Costantino & Carol DeAngelis, which paid for our very first delivery van (which, incredibly, is still on the road today with nearly 200,000 miles on it!). With the relentless demands of keeping our business alive—stepping back into the kitchen, packing orders, and making deliveries—I barely made it to the birth of our second daughter, Camilla. We’ve come close to the decision to close our business on more than one occasion, but despite all these hardships, we’ve pushed forward, encouraged by faith, resilience, and an unwavering commitment to our mission: providing healthy, accessible meals to our community, no matter the obstacles. Today we are grateful to have a dedicated, passionate, and aligned team by our side – we truly couldn’t do it without each one of them.

We specialize in high-quality, nutritious meals crafted with real, whole ingredients—free from seed oils and designed to fuel busy professionals, athletes, and families who want to eat well without the hassle of cooking. What sets us apart is our unwavering commitment to quality, community, and innovation. Unlike many meal services, we operate our own kitchens, ensuring that every meal is made fresh and never frozen.

One of the things that keeps us going—and one of our core missions—is serving those in need. We’ve been given a platform to make a lasting impact, and the heart of that impact lies in our deep commitment to the community. We proudly partner with local churches like the Church of the City to donate meals weekly to foster families, single mothers, and others in need. Additionally, we are actively working to reduce plastic waste and implement more sustainable practices to ensure that our business operates in a way that is mindful of both people and the planet.

I think we’ve covered most of it! A few other notable things maybe around our dietary sensitivity. Most of our meals are gluten free and we have a large selection of dairy free, paleo, high protein, low carb, carnivore etc.
