Inspiring Conversations with Michael Harvey of One Spunky Spud

Today we’d like to introduce you to Michael Harvey.

Hi Michael, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
Well, I started cooking out of my house. I would sell plates and advertise on social media. Once I and my wife picked up more business, I quit my corporate job, withdrew my 401k and started our restaurant, One Spunky Spud! Now we are opening our second location in Germantown!

Can you talk to us a bit about the challenges and lessons you’ve learned along the way? Looking back would you say it’s been easy or smooth in retrospect?
Well, it’s been a road full of crater-sized potholes! We started March 2020, right at the beginning of covid. We had to shut our location down and went back to selling out of our home. We survived like this until the mall opened back up.

Appreciate you sharing that. What should we know about One Spunky Spud?
The name of my business is One Spunky Spud and we are located in the Rivergate mall food court. We are known for our different one-of-a-kind loaded baked potatoes! They are the bomb too! I am most proud that we have successfully branded ourselves and have over 850,000 followers and 11.5 million likes on our TikTok and other social media!

We have been shared by huge media outlets including buzz feed and tasty! I want the readers to know that there is a fat guy in Rivergate mall selling the most flavorful smack ya momma potatoes EVER! We offer kids’ parties, catering and all that good stuff!

Where we are in life is often partly because of others. Who/what else deserves credit for how your story turned out?
The BIGGEST supporters have been my wife, in-laws, and church family hands down. My wife has sacrificed so much for my dream and I’m so grateful! My in-laws have stepped in just like they were my blood family and helped carry One Spunky Spud to where it is today. My Bishop, first lady, and church family has pushed me and helped start One Spunky Spud by being one of the first to help us financially.
