Meet Marisela Mercado of Nashville

Today we’d like to introduce you to Marisela Mercado.

Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
I was born and raised in Honduras, where I studied to become an elementary school teacher and spent five fulfilling years shaping young minds. In 2000, I made a life-changing move to Los Angeles, California. My first job was in a Mexican food truck, where I discovered a deep love for Mexican cuisine. Cooking had always been close to my heart since childhood, but it was there, in that truck, that my passion truly came alive.

Later, I moved to Nashville, Tennessee, where I’ve now lived for over 22 years. I began working in housekeeping during the week while selling homemade food on the weekends. My dream of turning my love for cooking into a business became a reality in April 2015, when I opened my first restaurant and started catering events.

But just a year later, I was forced to close due to serious health issues. Over time, I underwent 14 surgeries. Then in 2020, when I finally thought I was getting better, I received a devastating diagnosis: stage 4 cancer. Doctors gave me little hope. While undergoing chemotherapy, I contracted COVID-19 and spent seven days in intensive care. But by the grace of God, I survived both cancer and COVID.

Today, I am a survivor, a person of deeper faith, and someone who lives with more purpose and gratitude than ever before. That journey inspired me to follow my passion once again—and this time, with even more heart.

That’s how our family-run catering business was born (or reborn). It’s not just about food—it’s about creating special, meaningful moments at every event we serve. We pour love, dedication, and flavor into everything we make, crafting unforgettable experiences one plate at a time.

Our business now is widening — with a broader menu and for different types of events. We’ve also started trying new ideas like meal preps.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Starting a business is never easy, but in my case, the road was especially challenging. I wasn’t just trying to build something from the ground up; I was also battling serious health issues. I had to find a way to cover medical expenses, support my household, and keep the business going—all at the same time. Balancing those responsibilities while fighting for my life made the journey incredibly difficult. But through it all, I stayed focused on my purpose and passion, and that’s what helped me move forward.

Appreciate you sharing that. What else should we know about what you do?
My work is all about creating flavorful, memorable dishes using fresh, local ingredients, along with carefully selected spices from around the world. I take pride in blending cultural influences to craft food that not only tastes delicious but also tells a story.

What I’m most proud of is that this business is a true family effort. We’ve built it together with love, dedication, and a shared passion for hospitality.

What sets me apart is the heart I put into everything I do. Every dish is prepared with care, intention, and deep passion—because for me, cooking isn’t just a job, it’s a way to connect with people and celebrate life.

Are there any important lessons you’ve learned that you can share with us?
The most important lesson I’ve learned is that life can bring you back to zero—whether through a business setback, an unexpected crisis, or a health challenge. But no matter how difficult the situation, I’ve learned to be grateful in both the good times and the hard ones. Every experience has taught me resilience, faith, and the importance of appreciating the journey.
