Today we’d like to introduce you to Chad Combs.
Hi Chad, so excited to have you with us today. What can you tell us about your story?
As a small child, I was always interested in what was happening in the kitchen with my grandmother, great-grandmother, and countless aunts as most of us, I started out in a pizza joint.
From there, working in a few corporate spots, learning the business behind it all. I moved to Nashville where I could work in more refined establishments. The idea was always to go learn what I can and bring it back to my small hometown.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall, and if not, what were the challenges you’ve had to overcome?
The road to becoming a chef much less a chef/owner is very smooth said no one ever!
Long hours, no spare time for friends & family. I have missed many weddings, funerals, holidays, etc. That is probably the largest regret. The road is winding, rocky, and sometimes redirected. if can hold on to some of your sanity, you find yourself constantly questioning almost all of your decision-making.
As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
I am a chef and owner of a small restaurant in Cookeville, TN. We don’t have a specific specialty, other than trying to make the best product for a small town in middle TN.
Suppose I had to say what I think I am known for would probably be our wine dinner pairings. I take a lot of pride and time in creating menus for our dinners. trying to explain that your palate is yours, you don’t have to love my idea, just understand it so you will be more educated the next time.
We all have different ways of looking at and defining success. How do you define success?
