Today we’d like to introduce you to Laura Rodriguez.
Hi Laura, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
I fell in love with food and cooking when I lived in Italy. I had a writing degree so I started working as a dishwasher in a cooking school to get my feet wet in the food industry. I soon moved up the ladder and became the manager of that cooking school. So over the course of four years, I listened to hundreds of cooking classes and practiced everything I learned at home. I went on to work in a restaurant for a few years which inspired me to open my own catering company. We moved to Nashville when my daughter was born and that’s when I started working for The Heimerdinger Foundation – a non-profit organization that feeds healing meals to cancer patients. I did everything I could to study how food can treat cancer and started applying these principles to my cooking. In cooking and eating this new way, I managed to reverse several food/lifestyle related illnesses I had been dealing with for years. Now I’m on a mission to teach and inspire others to do the same.
I’m sure you wouldn’t say it’s been obstacle free, but so far would you say the journey have been a fairly smooth road?
I don’t know if I’d characterize it as a bumpy or smooth road but rather a long, winding road that’s introduced me to hundreds of beautiful people and meaningful learning opportunities along the way.
As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
I help autoimmune warriors reclaim their love of food by sharing nutritious and delicious comfort food recipes, meal inspiration and ready to eat meals that won’t cause autoimmune flare ups. I specialize in sharing gluten/dairy/sugar/corn/soy free recipes I have developed over the decade I have been cooking. I’m most proud of the motivational advice I give to others who are just starting their journey of healing through food.
Is there any advice you’d like to share with our readers who might just be starting out?
You can heal through food. It takes time. Start slow and trust the process. You are not going to change overnight and you don’t want to. It took years to develop your disease – it will very likely take years to reverse it. Make a list of your top 10 favorite foods and then make them fit your current dietary needs instead of trying to eat food that fits your dietary needs. Find as many functional medical doctors you can online and follow them religiously. The more you learn about your disease, the more you will learn how to reverse or manage it. We have to eat everyday so every day is another chance to heal. Be patient and give yourself grace. You’re doing great!
